A very important feature for any CMS. We're hard at work towards this and it's firmly on our roadmap.

After this feature completion, will that make KeystoneJS more 'easy' to use as it is today ? Or will there be more options/gaps to fill in before running a keystonejs instance ?

Why do you mean by interface extensibility? Being able to add plugins to the admin interface?
This will take keystone to the next level.

Customize the header.
Add custom css.
do you plan give possibility to add custom field types \ field editors to admin panel?
It would be good if the admin UI could be overwritten by the same structure in your local workspace. e.g. site/admin/* would overwrite site/node_modules/keystone/lib/admin/*
Any news on this? Or how we could implement it even if it takes more effort than the real feature?
This is good, but I hope it doesn't turn into a future bloated WordPress. This is the reason why I left WordPress and turn to Keystone, for simple sites and apps like blogs and static websites
